here’s a lovely post for my two best friends who are perpetually confused on whether they should eat french or american pancakes. in the future, i hope to add japanese pancakes to the list too, as i absolutely love the fluffiness.
european pancakes:
1 cup of flour, 2 eggs, 1 cup of milk (and a little more milk to get it at a higher viscosity), mix well with a whisk. warm a pan with a bit of butter and cook your pancakes
american pancakes:
2 cups of flour, 2 eggs, 2 cups of milk, 2 tsp of baking powder, pinch of salt, mix all together
add butter to pan and then once heated add as many small pancakes as you can fit. using a ladle will help you to remain consistent with the size.
