ingredients: 1 large red bell pepper, 1 onion, 2 cans of tinned tomato, 1/4 tsp black pepper, 200g of feta, 6 eggs, 1 tsp cumin, 3 tbsp of olive oil, 1 teaspoon of paprika
1. heat oil in a pan and add onion, bell pepper, garlic, cumin, paprika. cook until onion is brown and soft and then add tomatoes, simmer for 10 minutes until the tomatoes are cooked and then stir in the feta.
2. make small nests in the pan with your wooden spoon and crack the eggs into them. season with salt and pepper and then cook on a low heat for 5-10 minutes until the eggs are cooked. serve with corriander
