i believe this beef stew is from irish origin like my good friend kayla who gave me this recipe. although it should be noted that i did change some things around i.e. the glass of red wine so its probably lost its authenticity. sorry kayla for the misnomer!
ingredients:
2 potato cut into 8, 1 onion 1cm thickness, two carrots, 500g beef mince, a teaspoon of dried thyme or oregano, 1 bay leaf, 1 tin of ox tail soup, and 1 beef stock, 1 cup of red wine
1. cook mince and then drain the juices
2. fry an onion, once browned add carrots, potato, cooked minced, oxtail soup can, beef stock and your chosen seasoning. add red wine.
3. simmer for 1-2 hours. add a handful of fresh parsley and season with salt/pepper.
notes: mix every 30 mins. add corn starch if requires thickening.
