The idea behind this cake is that the ingredients are very sweet and compensate for the reduced sugar. The fruits used are very high in natural sugar which give it its mirage feel. A similar feeling to opening a fast in Ramadan with a date.
Cake: 200g of flour, 2 teaspoons of baking powder, 70g of white sugar, 50g of Tahini, 75 ml of orange juice, 110g of butter, 2 large eggs, 3 bananas, 150g of dates
Icing: 150g of cream cheese, 2 tablespoons of icing sugar, 60g of Tahini
Optional date syrup: 1/2 teaspoon of cinnamon, 120g of dates, 1/2 cup of boiled water.
- Preheat oven to 200 degrees celsius. To make the date syrup, soak dates for a hour in hot water. Then add this mixture to a blender and smooth until smooth consistency.
- Mix all the fruit with tahini (including orange juice). Mix after adding each individual ingredient to ensure its mixed well. Add the sugar, butter, eggs and then all the dry ingredients to mix while smooth. Pour batter into a 9 inch dish and cook for 30 minutes. Check if it’s cooked using a butter knife. If the butter knife comes out clear then take out to cool.
- Mix all the icing ingredients and layer onto the cake. Add date syrup over the icing.
